Sally's Zucchini Bread

2 eggs
6 c sugar
3 c oil
2 c grated succhini
1 T salt
1 T vanilla
9 c flour
1 T cinnamon
1 T baking soda
2 c waltnuts

JUST BEAT IT!  If you beat it good enough you will get a nice popped top with a great looking crust.  Bake at 360 F for 65 to 70 minutes.
