Ginger Snaps

2 1/4 cups shortening
3 cups sugar
3/4 cups molasses
3 eggs
Cream the above ingredients together then add the following:
6 cups flour
6 tsp. soda
3 tsp. cinnamon
3 tsp. cloves
3 tsp. vanilla
3 cups sugar
6 eggs

Blend together in a Bosch mixer with the beaters.  Change to the dough hook and add:
6 cups flour
1 1/2 tsp. salt
6 cups oatmeal
3 tsp. soda
1 1/2 tsp. baking powder
12 oz. chocolate chips

Bake at 350* for 8 -10 minutes until the cookies are barely brown otherwise they won't be chewy.

Pineapple Pie

You may remember Dixie's CB name... "Pineapple Pie."  This is Lyle's favorite.

1/2 cup cornstarch
1 cup pineapple, crushed
1 1/2 cups sugar
3 egg yolks
3 cups boiling water
2 Tbsp. butter
pinch of salt
pie crust

Mix sugar and cornstarch into boiling water.  Cook for 15 minutes in a double boiler.  Add egg yolks; beat until smooth.  Remove from heat; add pineapple and butter.  Let cool.  Pour into pie shell.  Use egg whites for meringue.  If this is cooked in a heavy saucepan it can be done without the use of a double boiler.  The color of the mixture should be clear before the egg yolks are added.

Apple Cake

Dixie got this recipe from Kris Parker

1 yellow cake mix
3 eggs
32 oz. can apple pie filling

Mix the cake, eggs and pie filling.  Put into a 9x13 pan.  Sprinkle with topping.  Dent with spoon for topping to sit in.

Topping:
1/3 cup brown sugar
1 Tbsp. butter
1 cup nuts
1 tsp. cinnamon

Bake at 350* for 45 minutes.

Ice Cream Cake Roll

1/2 gallon softened ice  cream
3/4 cups sugar
1/4 cup cocoa
1 tsp. vanilla
6 eggs, separated
1/4 cup flour
1/8 tsp. salt
1/2 tsp. baking powder

Beat the egg yolks and sugar.  Add all other ingredients - except the ice cream and egg whites.  Beat the whites into stiff peaks.  Fold into the batter.  Line the pan with wax paper.  Cook for 10-15 minutes at 350*.  Cool for 5 minutes.  Peel the paper off and roll into a towel covered with powdered sugar.  Leave rolled 10-15 minutes.  Unroll.  Spread the ice cream to 2" from the edge of the cake.  Roll and freeze.

Soft Sugar Cookies

1 cup shortening
2 cups white sugar
3 eggs
1 cup canned milk with 1 tbsp. vinegar added or 1 cup sour cream
1 tsp. vanilla

Cream the above ingredients together.  Add the following:

5 cups flour
1 tsp. soda
1 tsp. salt
1 tsp. baking powder

Mix together well.  Chill.  Roll our on floured board.  Bake at 350* for 8-10 minutes.

Butterscotch Pie

3 cups milk
4 eggs
2 Tbsp. margarine
2 cups brown sugar
2 tsp. vanilla
8 Tbsp. flour

Mix brown sugar and flour together with a fork.  Beat egg yolks and add to milk.  Heat the milk in a heavy pan.  Add the brown sugar mixture any time; the milk doesn't have to be hot.  Cook until thick and boil one minute.  Add the vanilla and about 2 tbsp. margarine.  Cool and beat egg whites to make meringue.  The mixture may curdle a little at first, but continue beating and the curds will disappear as it cooks.

Peaches and Cream Cheesecake

3/4 c flour
1 t baking powder
1/2 c milk
1/2 t salt
1 small pkg vanilla pudding, not instant
1 egg
3 T soft butter

Mix all ingredients in a large bowl and beat for 2 minutes.  Pour into a large greased pie tin.  Save the juice from 1 qt of canned peaches and set aside.  Place 1 qt of canned peaches, drained, over the batter.
Combine:
1 - 8oz cream cheese, softened
1/2 c sugar
3 T peach juice

Beat 2 minutes and spoon on top of peaches about 1/4" from the edge.  Sprinkle with cinnamon and sugar.  Bake for 350F for minutes.  Cool.

Monster Cookies

Dixie got this recipe from her sister-in-law, Janet Petersen.

6 eggs
4 3/4 c brown sugar
1 1/2 t vanilla
4 t baking soda
3 c peanut butter
1 - 16oz bag of M&Ms (3 cups)
2 c white sugar
1 1/2 t Karo syrup
2 cubes margarine
9 c oatmeal

Mix together and bake at 350F for 10-12 minutes.

Chocolate Syrup

(from Kathy Hansen's grandmother)  A Christmas favorite Kathy gives as gifts.

2 1/2 cups sugar
1/2 c cocoa
1/2 c Karo syrup
1 t vanilla
1/3 c water
1 can evaporated milk

Mix sugar, cocoa, Karo, and water in a 2 quart pan.  Heat to boiling point, stir once, put on low heat and simmer for 20 minutes.  Remove from heat and add milk, and vanilla.  Stir well.  Put in a quart jar and store in the refrigerator.

Rocky Road Squares

1 - 12oz pkg chocolate chips
1 - 14oz can sweetened condensed milk
2 T margarine
2 c dry roasted peanuts
1 - 10 1/2oz pkg of mini marshmallows

Mix together chocolate chips, condensed milk and margarine and heat for 4 minutes on high in the microwave.  Add peanuts and marshmallows, stirring well.  Put in cake pan lined with wax paper.  Chill 2 hours.  Cut and serve.

Caramel Corn

This is Dixie's dad's recipe.

2 1/2 c brown sugar
1 cube margarine
1 c Karo syrup
1 can Eagle brand condensed milk

Mix sugar and Karo and bring to a boil.  Add the butter.  When the butter is melted add 1 can of condensed milk.  Pour over popcorn and mix well.

Fantasy Fudge

6 c sugar
3 cubes margarine or butter
1 1/2 c canned milk

Cook in heavy pan.  Boil and cook stirring for 5 minutes.  Remove from heat and add:

4 c chocolate chips
2 - 7oz jars marshmallow cream
2 t vanilla

Spread on Pam-sprayed cookie sheet and cool.

Cream Puffs

Dixie got this recipe from Janene Cobb.

1 c water
1/3 c shortening or margarine
1/2 t salt
1 c flour
4 eggs

Boil the water, shortening and salt.  Bring it to a brisk boil.  Add the flour and stir quickly.  Cool a little.  Add the eggs one at a time stirring between each.  Bake by the teaspoonful on a greased cookie sheet.  Bake at 450 F for 15 mintures and turn oven down to 350 F and bake for another 25 minutes.  Do NOT open the oven.  Cool and fill with sandwich filling or pudding, etc.  (Sometimes it doesn not take 25 minutes but to check look through the oven window, do not open the door - they will fall).  Dixie has made these with whole wheat flour and they are also very good.

Beau Monde Bread

1 loaf of French bread, unsliced
8oz shredded Swiss cheese

Seasoning Mixture
1/2 lb softened margarine or butter
1 T prepared mustard
1/2 t Beau Monde Seasoning or Bon Appetit Seasoning
2 T lemon juice
1 T poppy seeds

Blend the softened butter with the other seasonings.  Cut Xs almost but not quite all the way through to the bottom of the bread loaf.  Stuff the Xs with Swiss cheese.  Use toothpicks to hold the bread together if necessary.  Cover the loaf with the seasoning mixture.  Place the loaf on foil.  Roll up loosely 3/4 up the side of the loaf.  Bake for 10-30 minutes at 350 F as desired.

Breakfast Muffins

1 egg
1 c milk
1/4 c oil
1/4 c sugar
1 t salt
2 c flour
3 t baking powder

Beat the egg, milk, oil and sugar.  Add the remaining ingredients.  Spoon the dough into muffin tins.  Bake at 400 F for 20-25 minutes.

Whole Wheat Bread

In a Bosch mixer put the following:

2 1/2 c hot water
1 T salt
1/3 c honey
1/3 c applesauce

Add 3 c whole wheat flour (freshly ground is best) and mix slightly.  Sprinkle 2 T powdered yeast over the top.  Add 3 more cups of whole wheat flour.  Mix the dough until it pulls slightly from the sides of the mixer.  Let the mixer knead the dough for 10 minutes.  Remove the dough from teh mixer and place on the Pam-sprayed counter.  Divide into 3 loaves or desired amount.  Let the dough rise to double its size then bake at 350 F for 40 minutes.

12-Hour Butterhorns

This is Dixie's mom, Mildred Petersen's recipe.

1/2 c margarine
1 c milk
1/2 c sugar
3 eggs
1 t salt
4 c flour
1 T yeast
1/2 c water

Just before going to bed put margarine and milk in the microwave to semi-melt the margarine and heat the milk.  Put sugar and salt in a large bowl and then add the margarine and milk.  Add 2 cups of four and then the yeast.  Let sit a minute and add the other 2 cups of flour, no more.  Let it sit on the counter overnight covered with a cloth or plastic wrap.  In the morning dump dough onto floured counter.  Work a little flour into the dough.  It will be sticky, but doesn't take much flour to make it workable.  Divide in half.  Roll out each part into a circle.  Spread melted margarine on top.  Cut into triangles like a pizza (16 slices) and roll up from the big end to the small end.  Put on a greased cookie sheet and let rise.  Bake at 350 F for 12 minutes.  Makes 32 rolls.

Dixie's White Bread

Mix and set aside:
1 1/2 T yeast
1/4 cup warm water
1/2 T sugar

Mix in mixer:
3 cups hot water
1 T salt
1/2 c sugar
1/2 c margarine or shortening
4 c flour

Mix to paste and add yeast mixture.  Let rest a few minutes.  Add flour until the dough pulls away from the sides of the mixer.  Knead and then put in a greased pan.  Let the dough raise until it doubles in size.  Punch down.  Le the dough rise again.  Form into 3 loaves.  Let rise.  Bake at 350 F for 40 minutes.

This is the recipe Dixie uses for cinnamon rolls also.  Just roll out the bread dough, spread it with melted butter, sprinkle with brown sugar and cinnamon and cut into rolls.  Immediately after taking the rolls out of the oven frost with butter frosting.

Fruit Dip

from Dixie:
1 - 8oz pkg of cream cheese, softened
1 small jar of marshmallow cream

Stir the cream cheese and the marshmallow cream together until the mixture is smooth.  Refrigerate.  Serve with strawberries, watermelon, bananas, or whatever your heart desires.

Mix one small tub Cool Whip with one large container of strawberry yogurt - add the Cool Whip a little at a time to see how much you like.
