Refrigerator Cookies

1/2 cup soft shortening or margarine
1 cup brown sugar
1 egg
1/2 tsp. vanilla
1/2 tsp. soda
1/4 tsp. salt
1 3/4 cups flour

Mix shortening, sugar, egg and vanilla.  Blend flour, soda, salt and stir it into the sugar mixture.  Make the same recipe again but this time add 1 1/2 squares of unsweetened chocolate with the shortening.  Divide each recipe into two balls.  Place a ball of each kind on top of each other.  Roll out with a rolling pin.  Press and mold dough with hands into a long roll as big around as you would like the cookies to be.  Wrap dough in wax paper and chill until firm enough to slice.  Bake for 8-10 minutes at 400*.

Fruit Cobbler

1 c sugar
1 T corn starch
1 c water

Boil the above ingredients for 1 minute.  Pour over 3 cups of desired fresh fruit which has been put into a baking dish.  Dot the mixture with butter and sprinkle with cinnamon.

Topping:
1 c flour
1 T sugar
1 1/2 t baking powder
3 T shortening
1/2 c milk
1/2 t salt

Mix together and spoon over the top of the fruit mixture.  Bake at 400F for 35-40 minutes.

Judy's Rasin Vanilla Drops

Boil until soft:
1 1/2 c raisins
1 1/2 c wter

Drain.

1 c shortening (not margarine)
1 1/2 c sugar
3 eggs
1 t vanilla
3 1/2 c flour
1 t baking powder
1 t baking soda
1 t salt

Mix shortening, sugar, eggs, and vanilla.  Add raisins.  Stir in dry ingredients by hand.  Make into balls and roll in sugar.  Bake at 375 F for 10 minutes.  Take out of oven before they brown.

Chili Con Queso

2 - 28oz cans tomatoes
4 cans green chilies, chopped
2 c finely chopped onions
2 lbs Velveeta cheese
1 c half and half
4 cloves of garlic
8 T oil

Open the tomatoes and let them drain while in a colander.  (Judy likes to them then drain overnight).  Then add all the ingredients together in an electric frying pan or chafing dish.  Do not let the cheese get too hot or it will curdle.  Use Fritos for dipping.
