Pudding Cake

1 cup flour
2 tsp. baking powder
1/2 tsp. salt
3/4 cup sugar
2 tbsp. shortening or margarine
1/2 cup milk
1 tsp. vanilla
1 cup nuts (optional)

Cream the shortening and dry ingredients.  Add milk and vanilla.  Mix well and pour into greased pan.  Mix 1/2 cup sugar and 1/4 cup cocoa; sprinkle over cake.  Pour 1 1/2 cups boiling water on top.  Bake in a 350* oven for 45 minutes.  The pudding may be topped with whipped topping or ice cream.

Cocoa-Apple Cake

Cream till fluffy:
3 eggs
2 cups sugar
2 sticks margarine
1/4 cup water

Sift together:
2 1/2 cups flour
1 tbsp. cocoa
1 tsp. soda
1 tsp. cinnamon
1 tsp. allspice

Add to the creamed mixture and mix well. 

Fold in:
1 cup chopped nuts
1/2 cup semi-sweet chocolate chips
2 cups grated apple
1 tbsp. vanilla

Mix well and spoon into a greased and floured 10-inch tube pan.  Bake at 325* for 60-70 minutes.  Serve plain, dusted with powdered sugar, or melt chocolate chips (you may thin with a little milk) and then drizzle onto warm cake.

Texas Sheet Cake

Combine:
2 cups flour
2 cups sugar
1/2 tsp. salt
1 tsp. baking soda

Add:
2 eggs
1/2 cup sour cream

Boil:
1 cup water
4 tbsp. Hershey's cocoa
2 cubes butter

After boiling the ingredients let them cool and then add to the flour miture and beat.  Bake 20 minutes at 350* on a greased and floured cookie sheet.

Icing:

Melt:
1 cube butter
4 Tbsp. cocoa
6 Tbsp. milk

Add:
1 lb (2 cups) powdered sugar
1 tsp. vanilla

Mox together and frost.  Nuts are optional.

Swedish Coffee Cake

Mix together:
1 cube margarine
1 cup sugar
2 eggs
1 tsp. vanilla

Add:
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
pinch of salt

Fold in:
1/2 pint of sour cream
1 cup chocolate chips

Divide in half and layer in a greased Bundt pan.  In the middle and on top put the following:
Mix:
1/2 cup brown sugar
1 tsp. cinnamon
1/2 cup chopped nuts

Bake for 35-40 minutes at 350*.  Sprinkle with powdered sugar and serve.

Ginger Snaps

2 1/4 cups shortening
3 cups sugar
3/4 cups molasses
3 eggs
Cream the above ingredients together then add the following:
6 cups flour
6 tsp. soda
3 tsp. cinnamon
3 tsp. cloves
3 tsp. vanilla
3 cups sugar
6 eggs

Blend together in a Bosch mixer with the beaters.  Change to the dough hook and add:
6 cups flour
1 1/2 tsp. salt
6 cups oatmeal
3 tsp. soda
1 1/2 tsp. baking powder
12 oz. chocolate chips

Bake at 350* for 8 -10 minutes until the cookies are barely brown otherwise they won't be chewy.

Pineapple Pie

You may remember Dixie's CB name... "Pineapple Pie."  This is Lyle's favorite.

1/2 cup cornstarch
1 cup pineapple, crushed
1 1/2 cups sugar
3 egg yolks
3 cups boiling water
2 Tbsp. butter
pinch of salt
pie crust

Mix sugar and cornstarch into boiling water.  Cook for 15 minutes in a double boiler.  Add egg yolks; beat until smooth.  Remove from heat; add pineapple and butter.  Let cool.  Pour into pie shell.  Use egg whites for meringue.  If this is cooked in a heavy saucepan it can be done without the use of a double boiler.  The color of the mixture should be clear before the egg yolks are added.

Apple Cake

Dixie got this recipe from Kris Parker

1 yellow cake mix
3 eggs
32 oz. can apple pie filling

Mix the cake, eggs and pie filling.  Put into a 9x13 pan.  Sprinkle with topping.  Dent with spoon for topping to sit in.

Topping:
1/3 cup brown sugar
1 Tbsp. butter
1 cup nuts
1 tsp. cinnamon

Bake at 350* for 45 minutes.

Refrigerator Cookies

1/2 cup soft shortening or margarine
1 cup brown sugar
1 egg
1/2 tsp. vanilla
1/2 tsp. soda
1/4 tsp. salt
1 3/4 cups flour

Mix shortening, sugar, egg and vanilla.  Blend flour, soda, salt and stir it into the sugar mixture.  Make the same recipe again but this time add 1 1/2 squares of unsweetened chocolate with the shortening.  Divide each recipe into two balls.  Place a ball of each kind on top of each other.  Roll out with a rolling pin.  Press and mold dough with hands into a long roll as big around as you would like the cookies to be.  Wrap dough in wax paper and chill until firm enough to slice.  Bake for 8-10 minutes at 400*.

Ice Cream Cake Roll

1/2 gallon softened ice  cream
3/4 cups sugar
1/4 cup cocoa
1 tsp. vanilla
6 eggs, separated
1/4 cup flour
1/8 tsp. salt
1/2 tsp. baking powder

Beat the egg yolks and sugar.  Add all other ingredients - except the ice cream and egg whites.  Beat the whites into stiff peaks.  Fold into the batter.  Line the pan with wax paper.  Cook for 10-15 minutes at 350*.  Cool for 5 minutes.  Peel the paper off and roll into a towel covered with powdered sugar.  Leave rolled 10-15 minutes.  Unroll.  Spread the ice cream to 2" from the edge of the cake.  Roll and freeze.

Red Velvet Cake

2 cups flour
2 tbsp. cocoa, heaping
2 eggs
1 tsp. soda
1/4 cup cornstarch
1/2 cup shortening
1 cup buttermilk
1 tbsp. white vinegar
1/2 tsp. salt
1 1/2 cup sugar
1 tbsp. red food coloring

Cream together the cocoa, shortening, sugar and eggs; add to the dry ingredients except the soda.  Add buttermilk and food coloring.  Hold 1 tbsp. of vinegar over the bowl and pour soda into it.  This will foam up so hold it over the cake mixture bowl.  Beat together 5 minutes.  Put into a greased and floured cake pan.  Bake at 350* for 30-40 minutes.

Frosting:
Blend 5 tbsp. flour into 1 2/3 cups milk and cook, stirring constantly.  This will get really thick in 5-10 minutes.  Cool.  Mix 1/2 cup butter, 1/2 cup margarine, 1 2/3 cup granulated sugar, and 1 tsp. vanilla.  Cream the mixture unil it's light and fluffy.  Add flour and milk mixture and beat until the texture is thick and creamy.  Spread over the cake.

Soft Sugar Cookies

1 cup shortening
2 cups white sugar
3 eggs
1 cup canned milk with 1 tbsp. vinegar added or 1 cup sour cream
1 tsp. vanilla

Cream the above ingredients together.  Add the following:

5 cups flour
1 tsp. soda
1 tsp. salt
1 tsp. baking powder

Mix together well.  Chill.  Roll our on floured board.  Bake at 350* for 8-10 minutes.

Pear Bar Cookies

1 cup flour
1/4 cup brown sugar
1/4 cup butter
Beat together and put in to a 9-in square pan.  Bake at 350* for 15 minutes.

1/2 cup brown sugar
1/2 tsp. cinnamon
1/2 tsp. lemon juice
2 eggs
1/2 tsp. baking powder
1 cup diced pears
1/4 cup flour
1/4 tsp. salt

Mix together.  Pour over the crust.  Spread the following on top:
1 cup coconut
1/2 cup nuts

Bake until done.

Date Pinwheels

1 lb. chopped dates
1/2 cup water
1/2 cup sugar
Cook for 2-3 minutes.  May need to add a little more water if too thick.  Add 1 cup of chopped walnuts after it is cooked and let cook.

Cream together:
1/2 cup margarine
1/2 cup white sugar
1 egg
1 tsp. vanilla

Sift together the dry ingredients and add:
1 3/4 cup flour
1/2 tsp. soda
1/2 tsp salt

Stir until smooth.  Dough may be a little sticky.  Refrigerate for several hours.  Divide the dough in half and roll out on a floured bread board until about 1/4 inch thick.  Put half of the date mixture on it and roll it up, like a jelly roll.  Slice and bake in 350* oven for 10-12 minutes.  Do not overbake.

Chocolate Marshmallow Cookies

Cream together:
1/2 cup shortening
1 cup sugar
1 egg

Sift together:
1 3/4 cup flour
1/2 tsp. soda
1/2 tsp. salt
1/2 cup cocoa

Add:
1/2 cup milk
1 tsp. vanilla
Nuts if desired

Add the dry ingredients alternately with 1/2 cup milk, vanilla and nuts.  Bake at 350* for 8 minutes.  Take out of the oven and put a large marshmallow (cut in half) on the top of each cookie.  Return to the oven to melt.  Remove from the oven and cool.  Frost the cookies with your favorite chocolate frosting.

Butterscotch Brownies

2 cubes margarine
4 eggs
4 tsp. baking powder
2 tsp. vanilla
4 cups brown sugar
3 cups flour
2 tsp. salt

Mix together.  This will fill a double cake pan.  Sprinkle chocolate chips on top and bake at 350* for 25 minutes.

Butterscotch Pie

3 cups milk
4 eggs
2 Tbsp. margarine
2 cups brown sugar
2 tsp. vanilla
8 Tbsp. flour

Mix brown sugar and flour together with a fork.  Beat egg yolks and add to milk.  Heat the milk in a heavy pan.  Add the brown sugar mixture any time; the milk doesn't have to be hot.  Cook until thick and boil one minute.  Add the vanilla and about 2 tbsp. margarine.  Cool and beat egg whites to make meringue.  The mixture may curdle a little at first, but continue beating and the curds will disappear as it cooks.
